Setting different view templates for webs and topics

The TWiki documentation states that different view templates can be set for specific users or groups, either at site, web or topic level, but does not show how. Is there a preference that needs to be set, and where should I do it?

My specific need is to set a specific view template for a group of users in some select topics all around the site and one whole web. This template is unique to that group of users, and radically different from the others.
Different users, yes, different groups is harder. For different users, just set the VIEW_TEMPLATE preference in their personal topics. There is no way to set a preference unique to a group of users, and the documentation should not give that impression, so please indicate where you saw it and raise a task to get it corrected (in Foswiki).
